Dinner tonight with apples, hummus and peas

Roasted peas and apples with hummus sauce

Uses peas, apples, hummus, garlic, oil, salt, pepper.

  1. Heat oil in a pan and add minced garlic, cooking until fragrant.
  2. Add frozen peas and diced apples, roasting for eight minutes until edges caramelize.
  3. Stir in hummus mixed with two tablespoons water until combined and creamy.
  4. Season with salt and pepper to taste and serve warm.

Pea and hummus rice bowl with sautéed apples

Uses apples, hummus, peas, rice, onion, oil, salt, pepper.

  1. Cook one cup of rice in two cups of salted water, covered, until tender, about fifteen minutes.
  2. Slice the onion and cook it in oil over medium heat until soft and golden, about eight minutes.
  3. Add sliced apples to the pan and cook four minutes until browned at the edges, then season with salt and pepper.
  4. Stir peas into the pan for two minutes until hot and bright green.
  5. Spoon rice into bowls, top with the apple and pea mixture, and add a generous dollop of hummus.
