Dinner tonight with corn, eggs and milk

Corn and egg skillet with cheese

Uses corn, eggs, milk, oil, salt, pepper, onion, garlic.

  1. Heat oil in a skillet and sauté diced onion and minced garlic until soft.
  2. Add corn kernels and cook for three minutes, stirring occasionally.
  3. Whisk eggs with milk, salt and pepper, then pour over the corn mixture.
  4. Cook until eggs are just set, about five minutes, stirring gently.
  5. Serve hot from the skillet.

Corn fritters with soft fried eggs

Uses corn, eggs, milk, flour (staple), oil (staple), salt (staple), pepper (staple), onion (staple).

  1. Whisk one cup flour, one egg, half a cup of milk, a teaspoon of salt and plenty of pepper into a thick batter.
  2. Stir in two cups of corn kernels and half a finely chopped onion.
  3. Heat a thin layer of oil in a pan and fry spoonfuls of batter for three minutes per side until golden.
  4. Keep the fritters warm, then fry two to four more eggs in the same pan until the whites are set and the yolks are soft.
  5. Serve the fritters topped with the fried eggs and a pinch of salt and pepper.
