Dinner tonight with corn, hummus and peas

Roasted corn and pea hummus bowl

Uses corn, peas, hummus, oil, salt, pepper, garlic.

  1. Heat oil in a pan over medium-high heat and add corn with salt and pepper. Roast for five minutes until golden.
  2. Stir in peas and minced garlic, cooking for three more minutes until fragrant and heated through.
  3. Transfer to a bowl and top with a generous dollop of hummus, swirled through with a fork.

Hummus rice bowl with corn and peas

Uses corn, hummus, peas, rice, onion, garlic, oil, salt, pepper.

  1. Cook one cup of rice in two cups of salted water, covered, until tender, about fifteen minutes.
  2. Warm a little oil in a pan and soften a chopped onion for five minutes, then add minced garlic for one minute.
  3. Add the corn and peas and cook until hot and lightly browned in spots, about five minutes. Season with salt and pepper.
  4. Thin the hummus with a spoonful of warm water and a pinch of salt until it is easy to spoon.
  5. Spoon the rice into bowls, top with the vegetables, and finish with a generous dollop of hummus.
