Dinner tonight with eggs, lettuce and yogurt

Egg fried rice with yogurt lettuce salad

Uses eggs, lettuce, yogurt, rice (staple), oil (staple), garlic (staple), onion (staple), salt (staple), pepper (staple).

  1. Cook one cup of rice in two cups of salted water, then spread it on a plate to cool for ten minutes.
  2. Stir a spoon of minced garlic, a pinch of salt and pepper into half a cup of yogurt, then thin it with a splash of water.
  3. Fry diced onion and garlic in oil until soft, add the rice, and cook until hot and slightly crisp.
  4. Push the rice aside, scramble four eggs in the gap, then stir them through the rice and season.
  5. Shred the lettuce, toss it with the yogurt dressing, and serve it alongside the rice.

Yogurt dressed salad with scrambled eggs

Uses eggs, lettuce, yogurt, salt, pepper, oil.

  1. Roughly chop lettuce and place in a serving bowl.
  2. Whisk together yogurt, salt, and pepper to make a dressing.
  3. Heat oil in a pan and scramble the eggs until just cooked through.
  4. Toss the lettuce with the yogurt dressing.
  5. Top the salad with warm scrambled eggs and serve.
