Dinner tonight with hummus, lemons and peas

Lemony pea and hummus pasta

Uses hummus, lemons, peas, pasta, olive oil, garlic, salt, pepper.

  1. Boil salted water and cook the pasta until tender. Add the peas for the last two minutes. Reserve a cup of cooking water, then drain.
  2. Warm a little oil in a pan over low heat. Cook one minced garlic clove for one minute until fragrant.
  3. Stir in the hummus, the juice of one lemon, and a half cup of the reserved water. Whisk until smooth and creamy.
  4. Add the pasta and peas to the pan and toss well. Loosen with more cooking water if the sauce is thick.
  5. Season with salt and pepper. Grate some lemon zest over the top and serve hot.

Lemon pea hummus bowl

Uses hummus, lemons, peas, garlic, oil, salt, pepper, rice.

  1. Cook rice until tender, about 15 minutes, then drain and set aside.
  2. Heat oil in a pan and warm the peas for 3 minutes until heated through, then season with salt and pepper.
  3. Stir hummus with minced garlic, lemon juice and a splash of oil until creamy.
  4. Divide rice between bowls and top with warm peas and a dollop of lemon hummus.
  5. Finish with a squeeze of fresh lemon juice before serving.
