Dinner tonight with lemons, peas and pesto

Lemon pesto pasta with peas

Uses lemons, peas, pesto, pasta, salt, pepper, garlic, oil.

  1. Boil salted water and cook the pasta until just tender, adding the peas for the last two minutes.
  2. Warm a little oil in a large pan and soften one minced garlic clove for one minute.
  3. Reserve a cup of pasta water, then drain the pasta and peas and tip them into the pan.
  4. Stir in the pesto, the zest of one lemon, and juice of half, loosening with pasta water until glossy.
  5. Season with salt and pepper, taste for more lemon juice, and serve hot with lemon wedges.

Pesto pea pasta with lemon

Uses pesto, peas, lemon, pasta, garlic, oil, salt, pepper.

  1. Cook pasta in salted boiling water until tender, then drain and reserve one cup of pasta water.
  2. Warm pesto in a large pan with a drizzle of oil over medium heat, then add the cooked pasta and peas.
  3. Toss everything together, adding pasta water a splash at a time until you reach a creamy consistency.
  4. Finish with fresh lemon juice, taste and adjust salt and pepper to your liking.
  5. Divide into bowls and serve immediately.
