Dinner tonight with lettuce, milk and yogurt

Creamy lettuce soup with yogurt

Uses lettuce, milk, yogurt, oil, onion, garlic, flour, salt, pepper.

  1. Chop one onion and two garlic cloves. Cook them in two tablespoons of oil over medium heat until soft, about five minutes.
  2. Stir in two tablespoons of flour and cook one minute. Slowly whisk in two cups of milk until smooth and lightly thick.
  3. Add a whole head of roughly chopped lettuce. Simmer gently for five minutes until it wilts completely.
  4. Blend the soup until smooth, or mash it well with a fork. Season with salt and pepper.
  5. Take the pot off the heat and stir in half a cup of yogurt. Serve warm with a spoonful of yogurt on top.

Creamy yogurt salad with crispy lettuce

Uses lettuce, yogurt, milk, garlic, salt, pepper, oil.

  1. Wash and tear lettuce into bite-sized pieces and place in a serving bowl.
  2. Whisk yogurt and milk together with minced garlic, salt, and pepper to make a creamy dressing.
  3. Drizzle oil into the dressing and stir until smooth and combined.
  4. Pour dressing over lettuce and toss gently until well coated.
  5. Serve immediately while lettuce stays crisp and cool.
