What to do with the last of the ground turkey
Use the last of it for bolognese, tacos, or meatballs before the smell turns. Freeze it if you are not sure you will use it today.
- How long it keeps
- Keeps for one to two days in the coldest part of the fridge, or up to three months frozen.
- How to tell it has turned
- It has gone off if it smells sour or rancid, or if the surface looks gray or brown.

- half pound ground turkey
Staples
- 2 tablespoons oil
- 1 medium onion
- 2 cloves garlic
- to taste salt
- to taste pepper
- half teaspoon cumin
- Slice half an onion into thin half-moons. Heat 2 tablespoons oil in a large skillet over medium-high heat and cook the onion without stirring for 2 minutes, then stir and cook until soft and golden at the edges, about another 4 minutes.
- Push the onion to the side of the pan. Add half a pound of ground turkey to the empty space, break it apart with a wooden spoon, and cook without stirring for 2 minutes until it begins to brown.
- Stir the turkey into the onion, add 2 minced garlic cloves, half a teaspoon of cumin, salt, and pepper to taste, and cook until the turkey is cooked through and the pan is dry, about 4 minutes longer.
- Separate 8 to 10 large leaves from 1 head of butter lettuce and arrange them on a platter. Squeeze juice from half a lime over the turkey mixture and taste for salt.
- Serve the warm turkey on the lettuce leaves with lime wedges and let each person fill and roll their own wraps.
Note Swap ground turkey for ground chicken or pork. Wrap any leftovers in foil and eat cold the next day, or reheat gently. Serve with hot sauce, diced tomato, and cilantro if you have them.

- 2 cloves garlic

- Add the garlic and cook for 30 seconds until fragrant, then crumble in 1/4 pound of ground turkey, breaking it apart with a wooden spoon; cook until the turkey is cooked through and has lost its raw color, about 4 minutes.
- Pour in 14 ounces of canned crushed tomatoes and stir to combine. Season with salt and pepper to taste.
- Simmer the sauce for 5 minutes to let the flavors meld, stirring occasionally. Taste and adjust seasoning.
- Divide the pasta between two bowls and spoon the turkey bolognese over the top.
