  1. Heat 2 tablespoons oil in a skillet over medium-high. Dice 1 small onion and add it to the pan, stirring often until it softens and colours at the edges, about 4 minutes. Mince 2 cloves garlic and stir them in; cook until fragrant, about 1 minute.
  2. Add the drained white beans and stir to coat with oil. Let them warm through, mashing a few of them against the side of the pan to thicken the mixture, about 3 minutes. Season with salt and pepper to taste.
  3. Chop 4 ounces of greens and add them to the beans, stirring until they wilt, about 2 minutes. Taste and adjust seasoning.
  4. Toast 4 slices of bread until golden. Divide the bean mixture between two plates, spoon it over the toast, and serve at once.

Note Swap greens for sautéed mushrooms or canned tomatoes if you prefer. Leftovers keep covered in the fridge for two days and are good reheated with a splash of water or eaten cold the next day. Serve with a squeeze of lemon and grated cheese on the side.
