Coastal blend stir-fry with garlic and ginger

A quick stir-fry that lets the vegetables shine, this comes together in minutes from frozen. The coastal blend has good texture and bright flavor, and you just need garlic, ginger, and soy sauce to make it taste like takeout at home.

  • 1 tablespoon minced fresh ginger
  • 2 tablespoons soy sauce

  • 3 cloves garlic

  1. Heat 2 tablespoons oil in a large skillet over high heat until shimmering. While the oil heats, mince 3 garlic cloves and 1 tablespoon fresh ginger.
  2. Add the garlic and ginger to the pan and stir constantly for 30 seconds until fragrant, watching carefully so they do not burn.
  3. Pour in 3 cups of the coastal blend frozen vegetables straight from the bag and stir frequently for 5 to 6 minutes until heated through and the broccoli is tender-crisp. The corn and soybeans will warm quickly while the broccoli takes the full time.
  4. Drizzle 2 tablespoons soy sauce over the vegetables and toss to coat evenly. Taste the stir-fry and add salt and pepper as needed, then divide between two bowls.

Note Swap the soy sauce for tamari if you need gluten-free. Leftovers keep in the refrigerator for three days and reheat well in a skillet. Serve over rice or rice noodles, or with steamed white rice on the side.
