Mango yogurt smoothie bowl for two

A cold, thick bowl of mango yogurt topped with toasted almonds and rice crisps. Tonight you have one ingredient and the will to make dinner. Serve it with toast on the side for a complete meal.

  • 2 rice cakes

  1. Toast 1/4 cup almonds in a dry skillet over medium heat, shaking often, until fragrant, about three minutes. Crumble two rice cakes into bite-sized pieces onto a plate. Divide the yogurt between two bowls.
  2. Top each bowl with half the toasted almonds and half the rice cake crumbles. Add a pinch of salt to each and serve at once.

Note Swap almonds for any raw nut or seed. Yogurt keeps four weeks in the fridge. Serve with buttered toast or eat as a breakfast for tomorrow.
