Banquet fish sticks with a sharp salad

You bought the frozen fish sticks and mac and cheese because you wanted dinner in thirty minutes. Let the mac cook while you make a sharp vinegar slaw to cut the richness and eat it all on one plate.

Serves 2. 25 minutes, 10 at the stove.

  1. Heat the oven to 400°F [200°C]. Spread the fish sticks on one side of a baking sheet and slide it in; set a timer for 18 minutes. While they cook, slice one quarter of a head of cabbage as thin as you can.
  2. Toss the cabbage in a bowl with 2 tablespoons of vinegar, a pinch of salt, and a pinch of pepper; let it sit while the sticks finish.
  3. Cook the mac and cheese in a small pot over medium heat as the label says, stirring often so it does not scorch. The sticks and slaw will be ready when the pasta is.
  4. Divide the mac between two plates and prop three or four sticks against each mound. Top with as much slaw as you like and serve.

Note Swap the cabbage for shredded carrots or iceberg lettuce if you have either. Leftovers hold in the fridge for one day; warm the mac gently in a pot with a splash of water. Serve with hot sauce or tartar sauce on the side.
