Stir-fried vegetables and pasta with garlic

A swift stir-fry built on the Birds Eye mix, which brings cooked pasta and vegetables ready to go. You'll have a full plate in the time it takes to caramelize some garlic and toss everything in the pan.

Serves 2. 12 minutes, 10 at the stove.

  • 1 package Birds Eye stir-fry vegetables

Staples

  • 2 tablespoons oil
  • 2 cloves garlic
  • to taste salt
  • to taste pepper

  1. Heat 2 tablespoons oil in a large skillet over medium heat. Mince 2 garlic cloves and add them to the pan, stirring until fragrant, about 1 minute.
  2. Add the entire Birds Eye package to the pan and stir constantly until the vegetables are heated through and the edges begin to colour, about 4 to 5 minutes.
  3. Season with salt and pepper to taste. Divide between two bowls and serve at once.

Note Swap the Birds Eye mix for any frozen stir-fry blend you have on hand. Leftovers keep cold for two days and are fine served the next day at room temperature. Serve with soy sauce on the side and a lime wedge, or with a poached egg on top for more protein.
