Buttered corn fritters with eggs

A fast dinner that leans on the corn's butter sauce and starch to hold together crispy fritters, served alongside soft eggs. The frozen corn needs only heat, so this comes together in the time it takes to cook breakfast for dinner.

  • 1 bag [280 g] Birds Eye sweet corn in butter sauce

Staples

  • 4 eggs
  • 3 tablespoons [24 g] flour
  • to taste salt
  • to taste pepper
  • 2 tablespoons oil

  1. Heat 2 tablespoons oil in a wide skillet over medium-high heat. While it heats, thaw the bag of corn in a bowl or run it under warm water until the kernels separate, drain well, and fold 3 tablespoons flour into the corn until coated.
  2. When the oil shimmers, drop four separate spoonfuls of corn mixture into the pan and press each down gently with the spatula into a flat cake, cooking 3 minutes until the bottom is golden and crisp.
  3. Flip each fritter and cook 2 minutes more on the other side until set; slide onto a warm plate.
  4. With heat still on medium-high, crack 4 eggs into the empty skillet and cook to your preference, 3 to 5 minutes for set whites and a soft yolk; salt and pepper as they cook.
  5. Divide eggs and fritters between two plates and serve warm.

Note Swap the fritters for a buttered corn risotto if you have rice and broth on hand. Leftover fritters reheat in a dry skillet and keep in the fridge three days. Serve with hot sauce or a green salad to cut the butter.
