Creamed vegetable and pasta skillet with chicken

A straightforward weeknight dinner where the frozen mix does the work: butter-sauced vegetables and pasta meet pan-seared chicken breast for heft and protein. Everything cooks in one skillet in twenty minutes.

  • 1 package Birds Eye vegetables and shells in garlic butter sauce

  • 1 tablespoon oil

  1. Pat 10 ounces chicken breast dry and season with salt and pepper on both sides. Heat 1 tablespoon oil in a large skillet over medium-high heat until shimmering.
  2. Add chicken to the hot skillet and cook without moving for four minutes until the underside browns, then turn and cook three minutes more until the second side browns.
  3. Add the entire package of Birds Eye vegetables and shells directly to the pan, breaking up the block gently as it thaws, about three minutes.
  4. Stir gently until everything is heated through and the sauce coats the vegetables and pasta, one to two minutes.

Note Swap the chicken for shrimp or skip it for a vegetarian supper. Leftovers keep covered in the fridge for two days; reheat gently with a splash of water. Serve with a green salad or crusty bread to soak the sauce.
