Brown sugar mashed sweet potatoes with sausage

A weeknight supper that takes the frosted sweetness of the package and balances it with savory sausage, turning a side dish into a complete dinner. The sweet potatoes do the work; you just need to warm them and build around them.

  • one 12-ounce package brown sugar mashed sweet potatoes and carrots

  1. Brown 6 ounces of sausage links in a large skillet over medium heat, turning every couple of minutes, until they reach an internal temperature of 160 degrees F [71 degrees C], about 12 minutes. Transfer them to a cutting board to rest while you warm the sweet potatoes.
  2. Empty the package of brown sugar mashed sweet potatoes and carrots into the same skillet with 2 tablespoons of butter, stirring often until heated through, about 4 minutes. Season to taste with salt and pepper.
  3. Slice the sausage on the bias and fold it into the sweet potatoes, or serve it alongside. Divide between two plates and serve warm.

Note Swap the sausage for crispy bacon, crumbled, or skip the meat and add a fried egg on top instead. Leftovers keep covered in the fridge for three days; warm them gently over low heat. Serve with a green salad dressed with vinegar to cut the richness.
