Lemon couscous and spinach with butter

  • 1 package olive oil and lemon couscous and spinach, Birds Eye

Staples

  • 1 tablespoon butter
  • 1 clove, minced garlic
  • to taste salt
  • to taste pepper

  1. Heat 1 tablespoon butter in a large skillet over medium heat until it foams, then add 1 minced garlic clove and cook for about 30 seconds, stirring, until fragrant.
  2. Pour the entire contents of the couscous package into the skillet and stir to combine with the butter and garlic.
  3. Cover the skillet and cook for 8 minutes over medium-low heat, stirring once halfway through, until the couscous is heated through and has absorbed the flavours.
  4. Taste and season with salt and pepper as needed, then divide between two bowls and serve.

Note Swap the butter for more olive oil if preferred. Leftovers keep covered in the refrigerator for two days; reheat gently in a skillet with a splash of water. Serve with a simple green salad or a wedge of lemon on the side.
