Garlic butter roasted potatoes with eggs

A quick skillet of buttered roasted potatoes and eggs for two, built on a good frozen product that saves you the work. The sauced potatoes need only protein and a lid to become dinner, ready in twenty minutes.

Serves 2. 20 minutes, 8 at the stove.

  • 1 bunch fresh chives or scallions
  • 1/2 cup [55 grams] grated cheddar or feta

  • 1 bag (10 oz) sauced garlic butter roasted red potatoes

  • 1 tablespoon butter

  1. Heat 1 tablespoon oil in a large skillet over medium-high heat. Tip the entire bag of sauced potatoes into the pan and stir now and then as they warm and soften, about 5 minutes, while you crack 4 eggs into a bowl and beat them with a pinch each of salt and pepper.
  2. Push the potatoes to the sides of the skillet and add 1 tablespoon butter to the centre. When it foams, pour in the beaten eggs and let them sit for 30 seconds, then stir gently, pushing cooked curds aside as raw egg flows to the hot surface, until the eggs are set but still soft, about 3 minutes. Fold in 1/2 cup cheese.
  3. Taste the potatoes and eggs, add salt and pepper as needed, divide between two bowls, scatter chopped fresh chives over the top, and serve at once.

Note Swap the cheese for any hard cheese you have, or skip it for a plainer bowl. Leftovers hold in the fridge for one day, reheated gently in a pan with a splash of water. Serve with a green salad or pickled vegetables to cut the richness, or make it stretch by cooking grains on the side.
