Teriyaki tuna bowls with eggs and greens

Two of those convenient rice bowls with a soft egg on top and some greens stirred in make a balanced bowl dinner that tastes like you took time. The poached egg adds richness to the teriyaki sauce already there, and any lettuces or spinach brighten it up.

Serves 2. 12 minutes, 10 at the stove.

  • 2 cups mixed lettuces or spinach

  • 2 teriyaki quick catch tuna bowls

Staples

  • 2 eggs
  • to taste salt
  • 1 tablespoon vinegar

  1. Bring a pot of water with 1 tablespoon vinegar to a rolling boil and add a pinch of salt. Have the tuna bowls and a handful of mixed lettuces or spinach near the stove.
  2. Heat the tuna bowls according to their label in the microwave or by peeling the film and placing them in a warm bowl. Set them aside to stay warm while the eggs cook.
  3. Gently crack one egg at a time into a small cup and slide it into the boiling water, stirring once the whites begin to set. Poach for 2 to 3 minutes until the white is set but the yolk remains soft.
  4. Use a slotted spoon to lift each egg from the water. Divide the greens between the two bowls and top each with a poached egg.

Note Swap the egg for avocado, sliced, if you'd rather. Leftovers keep refrigerated for one day and are good cold or reheated with a splash of water. Serve with a cold beer or iced tea.
