Glazed pork chops with canned fruit

A quick weeknight main that turns canned fruit into a bright, tangy glaze for pork. The natural sweetness and acidity of the peaches, cherries, and mandarin oranges build a sauce that needs no second thought, just one pan and twenty minutes.

  • 1 cup Dole diced peaches
  • 3/4 cup Dole cherry mixed fruit
  • 1/2 cup Dole mandarin oranges

  • 1 tablespoon butter

  1. Pat two pork chops dry with paper towels and season both sides with 1/2 teaspoon salt and 1/4 teaspoon pepper. Heat 2 tablespoons oil in a large skillet over medium-high until shimmering. Lay the chops in the pan and sear until the undersides brown, about 3 minutes.
  2. Flip the chops, sear the other side for 2 minutes, then move them to the side of the pan. Pour 1 cup diced peaches with their liquid into the cleared space and let it reduce while the chops finish cooking, about 2 more minutes.
  3. Add 3/4 cup cherry mixed fruit and 1/2 cup mandarin oranges with their liquid to the pan. Stir and let the whole thing simmer for 3 minutes while the fruit softens and the flavors meld with the meat drippings.
  4. Stir in 1 tablespoon butter to gloss the sauce. Taste and add a pinch more salt and pepper if needed. The chops are done when an instant-read thermometer reads 145 degrees F [63 degrees C] at the thickest part.
  5. Divide the chops between two plates and spoon the glossy fruit glaze over and around them. Serve at once.

Note Swap chicken breasts or thighs for pork; extend the sear by a minute on each side for chicken. The glaze keeps for three days refrigerated and reheats gently in a covered skillet. Serve with rice or crusty bread to catch every drop of the sauce, or add a green salad on the side.
