Garlic green beans with egg and rice

Steam-in-bag green beans become supper when tossed with garlicky rice and a fried egg. This shelf makes a complete weeknight dinner in one pan, minimal fuss.

  • 1 bag steam-in-bag green beans

Staples

  • 1 cup rice
  • 3 cloves garlic
  • 2 tablespoons oil
  • to taste salt
  • to taste pepper
  • 2 eggs

  1. Bring 2 cups water to a boil in a large skillet over medium-high heat, then add 1 cup rice and 1 teaspoon salt. Cover, reduce heat to low, and cook for 15 minutes until the water is absorbed.
  2. While the rice cooks, microwave the steam-in-bag green beans according to package directions until tender. Mince 3 cloves garlic.
  3. When the rice is done, push it to the side of the skillet and add 1 tablespoon oil to the cleared space. Add the minced garlic and cook for 1 minute until fragrant.
  4. Add the steamed green beans to the skillet and toss everything together with the rice. Season with salt and pepper to taste.
  5. Heat 1 tablespoon oil in a separate small skillet over medium heat. Crack 2 eggs into the pan and cook to your preference, about 3 minutes for runny yolks, until the whites are set.
  6. Divide the rice and green beans between two bowls and top each with a fried egg. Serve at once.

Note Swap the rice for pasta, couscous, or grains on hand. Leftovers keep refrigerated for three days; reheat gently with a splash of water. Serve with soy sauce, hot sauce, or a squeeze of lemon on the side.
