- 1 package Gorton's tilapia fish sticks

- 2 tablespoons oil
- pinch salt
- Squeeze the juice from half a lemon into a small bowl and stir it into 3 tablespoons of mayonnaise with a pinch of salt. Let it sit while you cook.
- Heat 2 tablespoons of oil in a large skillet over medium-high heat until it shimmers. Lay out the fish sticks in a single layer and cook until the bottom is golden, about four minutes; turn them over and cook the other side until golden, about three more minutes.
- Transfer the fish sticks to a plate and squeeze the remaining lemon half over them. Serve with the tartar sauce on the side.
Note Swap the mayo for Greek yogurt if you have it. Leftovers keep refrigerated for one day. Serve with a simple salad or roasted vegetables to round out the meal.
