Strawberry banana yogurt parfait with granola

  • 1 cup [125 grams] flour
  • 1 cup [100 grams] oats
  • 4 tablespoons [56 grams] butter
  • 1/4 teaspoon salt
  • 1/4 cup [50 grams] sugar

  1. Heat your oven to 350°F [175°C]. Mix together 1 cup flour, 1 cup oats, 1/4 cup sugar, and 1/4 teaspoon salt in a bowl. Melt 4 tablespoons butter and stir it into the mixture with 3 tablespoons honey until evenly moistened.
  2. Spread the granola on a baking sheet and bake until golden, about 12 minutes, stirring once halfway through. You will smell it toasting and see the edges turn brown.
  3. While the granola bakes, divide 16 oz of the yogurt between two bowls. Top each with half the remaining yogurt once the granola is done. Scatter the warm granola over the top of each bowl.

Note Swap the honey for maple syrup or skip it if you prefer less sweetness. Store leftover granola in an airtight container for up to a week and the yogurt in its original packaging for up to its printed date. Serve with coffee or tea on the side.
