Key lime yogurt panna cotta with shortbread
Panna cotta is the answer when you have a flavored yogurt and an hour to chill. This shelf has done the work already—the key lime yogurt is silken and tart enough to make a set custard without cream. Serve it cold with buttery shortbread crumbs.

- 1 cup [240 g] key lime whole milk greek yogurt

- 4 tablespoons [55 g] butter
- 2/3 cup [85 g] flour
- 1/4 teaspoon salt
- 2 tablespoons sugar
- Heat 1/4 cup water in a small saucepan over low heat until steaming, then sprinkle 1 teaspoon unflavored gelatin over it and let sit for one minute to bloom, stirring gently until it dissolves completely.
- Whisk together 1 cup key lime yogurt and 1/2 cup heavy cream in a bowl until smooth, then pour the warm gelatin mixture into the yogurt while stirring constantly until incorporated.
- Divide the mixture between two glasses or bowls and refrigerate until set, about one hour.
- While the panna cotta chills, make shortbread: rub 4 tablespoons butter, 2/3 cup flour, 2 tablespoons sugar, and 1/4 teaspoon salt together with your fingertips until the mixture looks like sand, then press it into a small baking pan.
- Bake at 325°F [165°C] until pale golden at the edges, about twelve minutes, then let cool on the pan for five minutes and break into rough crumbs.
- Top each panna cotta with a handful of shortbread crumbs just before serving.
Note You can swap the yogurt for plain Greek yogurt plus 2 tablespoons key lime juice concentrate if you have it. Panna cotta keeps refrigerated for two days. Serve with strong coffee or iced tea for a light dinner.
