Warm turkey sandwich with gravy

A weeknight dinner that turns deli turkey and pantry staples into something warm and homey. The broth from the turkey package becomes a quick pan gravy to pour over toasted bread and tender meat, all done in one skillet in under twenty minutes.

Serves 2. 18 minutes, 12 at the stove.

  • 4 slices bread
  • 1 cup milk or broth

  • 1 package oven roasted thin sliced turkey breast

Staples

  • 2 tablespoons butter
  • 1 tablespoon flour
  • to taste salt
  • to taste pepper

  1. Toast the four slices of bread in a skillet over medium heat until golden on both sides, about four minutes total. Transfer to two plates.
  2. In the same skillet, melt two tablespoons butter over medium heat. Sprinkle in one tablespoon flour and stir constantly until the mixture turns light brown, about one minute.
  3. Pour the broth from the turkey package and one cup milk into the pan, stirring to smooth out any lumps. Simmer until the gravy thickens enough to coat the back of a spoon, about four minutes. Taste and season with salt and pepper.
  4. Drape the turkey slices over the toasted bread and pour the hot gravy over the top. Serve at once.

Note Swap milk for cream or half and half for richer gravy. Keep leftovers in a covered container in the fridge for up to two days. Serve alongside a quick salad or cooked vegetables to stretch the meal.
