Strawberry banana yogurt fool

A fool is whipped fruit folded into yogurt or cream—here the yogurt is the star, needing only a whip and a crumble to transform into dessert. This shelf holds a single-product dinner, light and done in five minutes flat.

  • 2 cups strawberry banana nonfat yogurt

  • 2 tablespoons butter
  • 3 tablespoons flour

  1. Melt 2 tablespoons butter in a small skillet over medium heat, then stir in 3 tablespoons flour and 1/4 cup sliced almonds until the mixture is nutty and golden, about 3 minutes, stirring often so it does not burn.
  2. Divide 2 cups yogurt between two bowls and top each with half the warm almond crumble, which will stay crisp as it cools against the cold yogurt.

Note Swap the almonds for crushed graham crackers or granola if that is what you have. The fool keeps in the fridge for a day if you hold the crumble separate. Serve as a light supper alone or as dessert after a simple sandwich.
