Creamed peas with ham and toast

Steamable peas become a fast creamed side that doubles as supper with ham and eggs stirred in. This shelf holds the protein and vegetable; you build around butter and cream for comfort.

  • one 10 oz bag sweet organic steamable peas
  • 4 oz ham

Staples

  • 2 tablespoons butter
  • to taste salt
  • to taste pepper
  • 1 tablespoon flour

  1. Toast two thick slices of bread while you work. Melt 2 tablespoons butter in a wide skillet over medium heat, then whisk in 1 tablespoon flour until it foams, about one minute.
  2. Gradually pour in 1/2 cup heavy cream, whisking until the sauce is smooth and thick, about three minutes. Season with salt and pepper.
  3. Stir in the peas from one 10 oz bag without thawing, then add 4 oz ham torn into bite-sized pieces. Simmer until heated through, about three minutes, stirring gently.
  4. Divide the creamed peas between two bowls and set each portion atop a piece of buttered toast. Serve right away.

Note Swap ham for bacon if you have it, or skip meat altogether and add a fried egg on top. Leftovers keep three days in a covered container and are good reheated gently with a splash of water. Serve with a green salad on the side to stretch the meal.
