Brown sugar ham with soft eggs and toast

Hillshire Farm's thin sliced brown sugar ham is salty and rich enough to build a whole supper around. Tear it into crispy shards, pile it under soft eggs, and you have breakfast-for-dinner with almost no cooking. The ham does most of the work.

  • 6 oz Hillshire Farm deli select ultra thin brown sugar ham

Staples

  • 2 tablespoons butter
  • 4 eggs
  • to taste salt
  • to taste pepper

  1. Tear the ham into rough shards and cook them in 1 tablespoon of butter in a skillet over medium-high heat, stirring now and then, until they are crispy and darkened at the edges, about 3 minutes.
  2. Push the ham to the side of the pan, lower the heat to medium, and add the remaining 1 tablespoon of butter. Crack 4 eggs into the pan, season them with salt and pepper, and let them cook until the whites are set but the yolks still move when you shake the pan, about 4 minutes.
  3. Toast 4 slices of bread while the eggs cook. When the toast is golden, divide it between two plates.
  4. Divide the ham and eggs between the plates, letting some of the butter from the pan pool onto each egg, and serve right away.

Note A poached egg replaces the skillet egg if you prefer. The ham keeps in its package for weeks in the refrigerator. Serve with hot sauce or a tomato slice on the side.
