Sausage patties with scrambled eggs and toast

  • 1 tablespoon butter
  • 4 eggs
  • pinch salt
  • pinch pepper

  1. Crack 4 eggs into a bowl, add a pinch of salt and pepper, and whisk to combine. Set a skillet over medium heat and melt 1 tablespoon butter, then pour in the eggs and stir gently until soft curds form, about 3 minutes.
  2. While the eggs cook, toast bread to your liking and arrange on plates.
  3. Heat the sausage patties in a second skillet or push the eggs to the side and warm the 1.0 oz patties in the same pan for 2 minutes per side until heated through.
  4. Divide the scrambled eggs, sausage patties, and toast between two plates and serve at once.

Note Swap the toast for rice or pasta if you prefer. Scrambled eggs keep two days in the refrigerator. Serve with hot sauce, jam, or fresh fruit alongside to round out the plate.
