Sausage and egg skillet with toast

These fully cooked sausage patties need only brief warming in a hot skillet with eggs, making a simple supper that comes together in minutes. Pair with toast and you have dinner on the table before you know it.

Serves 2. 15 minutes, 12 at the stove.

  • 1 package (4 patties) Jimmy Dean sausage patties

Staples

  • 1 tablespoon butter
  • 4 eggs
  • to taste salt
  • to taste pepper

  1. Heat 1 tablespoon butter in a large skillet over medium-high heat. Once foaming, add the sausage patties and warm for 2 minutes on each side until heated through, then move to the side of the pan.
  2. Crack 4 eggs into the skillet around the sausage patties and sprinkle with salt and pepper. Cook until the whites are set and yolks are done to your liking, about 3 to 4 minutes for firm yolks.

Note Swap the eggs for a cup of rice or pasta if you prefer a more filling meal. Leftovers keep in the fridge for one day; reheat gently in a skillet. Serve with buttered toast and hot sauce on the side.
