Turkey sausage crumbles with pasta and greens

A quick supper that turns seasoned turkey sausage into a warm bowl with pasta and whatever greens need using. The sausage has enough salt and sweet spice to carry the whole dish, so you need only oil, garlic, and a pan.

Serves 2. 25 minutes, 20 at the stove.

  • 2 tablespoons oil
  • 2 cloves garlic
  • to taste salt
  • to taste pepper

  1. Bring a pot of salted water to a boil and cook 6 oz of pasta until al dente, about 10 minutes. While it cooks, warm 2 tablespoons of oil in a large skillet over medium-high heat.
  2. Mince 2 cloves of garlic and add it to the oil, stirring constantly for 30 seconds until fragrant. Add 8 oz of turkey sausage crumbles and cook, breaking them apart with a wooden spoon, until warmed through and the sausage releases its fat, about 5 minutes.
  3. Add 4 oz of fresh spinach or other greens to the sausage, stirring often until wilted, about 3 minutes. Drain the pasta and add it to the skillet, tossing everything together until coated in the sausage fat and oil.
  4. Taste and season with salt and pepper as needed, then divide between two bowls and serve at once.

Note Swap the greens for whatever needs eating, or skip them and add 4 oz of chopped tomato or red bell pepper to the sausage instead. Leftovers keep covered in the refrigerator for three days and reheat gently with a splash of water. Serve with grated cheese and hot sauce on the side.
