Pan-Fried Turkey Sausage with Eggs and Toast

Turkey sausage patties go from package to table in minutes, crisped in a skillet where you'll cook eggs in the rendered fat. A straightforward dinner for a tired night: protein, fat, carbs, done.

  • 8 oz turkey sausage patties

  • 1 tablespoon butter
  • 4 eggs
  • to taste salt
  • to taste pepper

  1. Set a skillet over medium-high heat. Lay 4 sausage patties in the dry pan and cook for 3 to 4 minutes until the undersides brown, then flip and cook another 3 minutes until cooked through. Transfer to a plate.
  2. Lower heat to medium. Add 1 tablespoon butter to the pan and crack 4 eggs into it, keeping the yolks whole if you want, or stirring to scramble. Season with salt and pepper. Cook for 3 to 4 minutes, stirring or letting them set as you prefer, until they reach your doneness.
  3. Toast 2 slices of bread while the eggs cook. Plate the sausage, eggs, and toast.

Note Swap the eggs for a grain or leftover rice if you need more bulk. Leftovers keep two days covered in the fridge. Serve with hot sauce, hot coffee, or both.
