Cottage cheese and raisin pasta bake

Cinnamon raisin cottage cheese transforms into a warm, slightly sweet pasta sauce in this weeknight bake. The spice and fruit are built in, so all you add is pasta and a little heat. Mild and comforting, it comes together in one pan.

Serves 2. 25 minutes, 10 at the stove.

  • 2 cups [450 g] cinnamon raisin low fat cottage cheese, cinnamon raisin (Kroger)

  • 8 oz [225 g] pasta
  • 2 tablespoons [30 g] butter
  • to taste salt
  • to taste pepper

  1. Bring a pot of salted water to a boil and cook 8 oz pasta until al dente, about 9 minutes. Drain and set aside.
  2. While the pasta cooks, warm 2 tablespoons butter in the pot over medium heat, then stir in the 2 cups cottage cheese with its raisins and cinnamon until warmed through, about 3 minutes; do not boil.
  3. Fold the cooked pasta into the cottage cheese mixture until combined. Season with a pinch of salt and pepper. Divide between two bowls and serve warm.

Note Swap pasta for rice or egg noodles if you prefer. Leftovers keep in the fridge for three days; reheat gently in a pot with a splash of water. Serve with a simple green salad or steamed broccoli on the side.
