Tuna salad toast with tomato and greens

The shelf's tuna salad is bound and tangy already, so toast it on bread with ripe tomato and a sharp green to make a proper supper. This needs only five minutes and one pan.

Serves 2. 10 minutes, 5 at the stove.

  • 4 slices sourdough or other firm bread
  • 1 tomato, 2 handfuls ripe tomato and tender greens or lettuce

  • 1 can yellowfin tuna salad, yellowfin (Kroger)

  • 1 tablespoon oil
  • to taste salt
  • to taste pepper

  1. Heat 1 tablespoon oil in a skillet over medium-high. Toast 4 slices of bread until golden and crisp on both sides, about four minutes total; set them on two plates.
  2. Divide the tuna salad from the can between the four toasts, spreading it evenly. Top each with 2 or 3 slices of ripe tomato, a pinch of salt and pepper, and a handful of tender greens or lettuce.

Note Swap the greens for sliced avocado or cucumber if you like. Leftover tuna salad keeps three days covered in the fridge and makes a good lunch pile on crackers. Serve with a sharp vinaigrette on the greens or a cold drink.
