Lime shrimp ramen with soft eggs
One package of instant ramen becomes dinner with a poached egg and hot sauce, turning a weeknight staple into something you'll actually want to eat. The lime and shrimp flavoring carries the broth, and a raw egg stirred in at the end adds richness and protein.

- 2 eggs
- Bring 3 cups water to a boil in a pot, then add the ramen noodles and the flavor packet and boil for 3 minutes, stirring occasionally, until the noodles are tender but still have some bite.
- While the noodles cook, crack 2 eggs into two small bowls. Pour the cooked ramen and broth into two bowls, then slide one egg into each bowl and stir gently to break the yolk so it cooks in the hot broth and turns creamy, about 30 seconds.
- Divide the hot sauce between the bowls (about 1 tablespoon each), season with a pinch of salt and pepper, and serve right away while the broth is still steaming.
Note Swap the hot sauce for sriracha or a squeeze of fresh lime juice if you have it. Leftovers won't improve, so make this fresh. Serve with pickled vegetables or a side salad to balance the rich broth.
