Brown sugar bourbon sausage with cabbage and apples

Sweet-spiced sausage takes just minutes to brown, then wilts tender cabbage and tart apples in its rendered fat. This shelf holds all the seasoning you need for a weeknight supper that tastes thought-through but asks almost nothing of you.

  • 1 small head (about 1 pound) cabbage
  • 2 medium tart apples

  • 1 tablespoon oil
  • to taste salt

  1. Heat 1 tablespoon oil in a large skillet over medium-high heat. Cut the sausage into 1/2-inch rounds and add them to the pan, stirring occasionally until they brown at the edges, about 5 minutes.
  2. While the sausage cooks, halve, core, and slice 2 tart apples into 1/4-inch wedges. Slice 1 small head of cabbage into 1/4-inch ribbons. When the sausage is browned, push it to the side of the pan.
  3. Add the cabbage and apples to the empty side of the pan and stir to combine with the sausage and its fat. Cook, stirring often, until the cabbage softens and the apples turn tender, about 12 minutes. Season with salt and pepper to taste.

Note Swap the apples for pears or firm pears if you have them. This keeps, covered, for up to three days; reheat gently over low heat. Serve on its own or over rice if you need more volume at the table.
