Lime mayonnaise shrimp and greens

Lime mayonnaise turns shrimp glossy and bright; you build the plate with tender greens and a squeeze more citrus. This shelf makes a weeknight dinner that feels like something you chose to cook, not something you had to.

  • 3/4 pound [340 g], peeled shrimp
  • 4 cups [120 g] tender greens or spinach

  • 1/3 cup [80 mL] lime mayonnaise
  • 1 tablespoon [15 mL] lime juice

  • 2 tablespoons [30 mL] oil
  • 1 clove garlic

  1. Heat 2 tablespoons oil in a large skillet over high heat. While it heats, mince 1 clove garlic and season 3/4 pound shrimp with salt and pepper.
  2. When the oil shimmers, add the shrimp and garlic to the pan and cook, stirring once, until the shrimp are just cooked through, about three minutes. The shrimp will turn opaque and curl slightly; that is your cue to stop.
  3. Fold 1/3 cup lime mayonnaise into the shrimp off heat, tilting the pan to coat them evenly. Taste and add salt and pepper if you need it.
  4. Place 4 cups tender greens on each of two plates. Top with the shrimp and drizzle with any sauce left in the pan. Finish each plate with 1/2 tablespoon fresh lime juice.

Note Swap shrimp for white fish fillet or chicken cut into bite-sized pieces; adjust cooking time. Leftovers keep two days in the cold and make a sharp sandwich. Serve with white rice or crusty bread to soak up the sauce.
