Buttered peas with garlic and thyme

Frozen peas are a weeknight anchor, ready in minutes and full of sweetness. A quick turn in butter with garlic and thyme makes them a side that tastes considered. Serve alongside whatever else you've got on hand.

Serves 2. 15 minutes, 5 at the stove.

  • 1 bag [280 g] green steamable peas, green (Meijer)

Staples

  • 2 tablespoons butter
  • 2 cloves garlic
  • to taste salt
  • to taste pepper
  • 1 teaspoon dried thyme

  1. Mince 2 cloves garlic and melt 2 tablespoons butter in a wide skillet over medium heat.
  2. Add the minced garlic and 1 teaspoon dried thyme, stirring until fragrant, about 1 minute. Tip the entire bag of frozen peas into the skillet.
  3. Stir once or twice and cover the skillet, letting the peas steam and heat through for 5 minutes, stirring halfway through.
  4. Taste and season with salt and pepper as needed, then transfer to a serving dish.

Note If you have parmesan or a lemon, grate or squeeze some over the peas at the end. Leftovers keep three days covered in the fridge and reheat gently in a covered pan with a splash of water. Pair with roasted chicken, grilled fish, or a grain like rice or couscous.
