Crisp veggie burger with quick slaw

Two garden veggie burgers pan-fried until their edges turn golden, served on toasted buns with a quick-dressed slaw that needs no mayo. This shelf holds dinner for two in one product, and the slaw brings the freshness and crunch that makes it sing.

  • 1/2 small head cabbage, green or red
  • 2 burger buns

  • 1 tablespoon oil
  • 1/4 teaspoon salt
  • to taste pepper
  • 1 clove, minced garlic

  1. Slice 1/2 small head of cabbage into thin ribbons and place in a bowl. Add 1 minced clove of garlic, 1/4 teaspoon salt, and pepper to taste, then drizzle with 2 tablespoons oil and 1 tablespoon vinegar or lemon juice if you have it. Toss and set aside while you cook the burgers.
  2. Heat 1 tablespoon oil in a large skillet over medium-high heat. When it shimmers, place both veggie burger patties in the pan and let them cook without moving for 3 to 4 minutes, until the bottoms are golden and crisp.
  3. Flip each patty carefully and cook the other side for 3 to 4 minutes until that side is also golden. While they cook, split and lightly toast the 2 burger buns if you like.
  4. Transfer each burger to a toasted bun and top with the cabbage slaw. Serve right away with any slaw juices spooned over.

Note Swap the slaw for sliced tomato and lettuce if you prefer. The cooked burgers will keep wrapped in the fridge for two days. Serve with a cold drink and extra slaw on the side, or add a few roasted potatoes to stretch the meal.
