Sweet mustard nuggets with roasted broccoli
Crispy soy nuggets with a tangy mustard coating meet tender broccoli—a sheet pan dinner that tastes more composed than the ten minutes it takes to pull together. The nuggets bring their own seasoning, so you're mostly just roasting and letting the oven do the work.

- 1 bag (about 10 oz) veggie sweet mustard chik'n nuggets

- Heat the oven to 425°F [220°C]. On a sheet pan, toss 6 cups broccoli florets with 2 tablespoons oil, salt, and pepper until coated. Spread in a single layer and roast for 10 minutes while you prep the nuggets.
- Toss the nuggets with 3 tablespoons veggie sweet mustard in a bowl until evenly coated. After the broccoli has roasted 10 minutes, push it to the edges of the pan and arrange the coated nuggets in the center.
- Return the pan to the oven and roast for 12 to 15 minutes, until the nuggets are heated through and the broccoli is tender and lightly charred at the edges.
Note Swap the broccoli for cauliflower, green beans, or Brussels sprouts cut in half. Leftovers keep for three days in a sealed container and taste good cold or reheated in a 350°F [175°C] oven for five minutes. Serve with rice, couscous, or crusty bread to soak up the mustard glaze.
