Brioche buns with eggs and ham

Brioche buns are rich enough to star in a quick dinner with little more than butter, eggs, and ham. Toast them crisp outside, stuff them soft, and you have a meal that tastes like you tried when you barely had time to think.

Serves 2. 20 minutes, 15 at the stove.

  • 2 slices Swiss cheese

  • 4 eggs

  1. Split 4 brioche buns in half and set the oven to 400°F [200°C]. Melt 1 tablespoon of butter in a skillet over medium-high heat, then add the buns cut side down and toast them until golden, about 2 minutes.
  2. Crack 4 eggs into a bowl, whisk them with a pinch of salt and pepper, then pour them into the same skillet over medium heat while the buns cool. Stir the eggs gently until soft curls form, about 3 minutes, then turn off the heat.
  3. Top the bottom half of each bun with a piece of Swiss cheese and 1 ounce of sliced ham, then divide the warm eggs among them. Top with the bun caps and press gently.

Note Swap the ham for bacon or skip it entirely for a simpler meal. Leftovers keep wrapped in the refrigerator for one day; reheat gently in the oven. Serve with a side salad or soup to stretch it into a full meal.
