Mango brioche French toast for two

The mango and butter already built into this brioche mean you're halfway to French toast before you start. Thick slices soak fast in egg and milk, then hit the pan hot to turn golden and crisp on the outside while staying tender inside.

  • 1 tablespoon butter
  • pinch salt
  • 1/4 teaspoon cinnamon

  1. Crack 2 eggs into a shallow bowl with 1/4 cup milk, 1/4 teaspoon cinnamon, and a pinch of salt, then whisk until the milk lightens the eggs and the spice is distributed.
  2. Set a large skillet over medium-high heat and add 1 tablespoon butter; while it foams and starts to brown, dip 4 thick slices of brioche into the egg mixture, turning once so both sides absorb the custard.
  3. Lay the soaked brioche in the hot skillet and cook until the bottom is deep gold and releases easily, about three minutes; flip and cook the other side until firm but still tender inside, another two to three minutes, and slide onto plates.

Note Swap the milk for unsweetened almond milk or oat milk if you have it. Leftovers keep one day in a sealed container and reheat well in a toaster oven. Serve with yogurt and fresh fruit, or a drizzle of honey and fleur de sel.
