Hot dog buns with creamed tuna
Hot dog buns make a tender base for a quick creamed tuna filling, much better than it sounds. The buns are rich enough to hold their shape under a simple sauce, and this turns a shelf staple into dinner without fuss.

- 1 cup whole milk

- 3 tablespoons butter
- 1 tablespoon flour
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons minced onion
- Melt 3 tablespoons butter in a small saucepan over medium heat and add 2 tablespoons minced onion. Cook until the onion softens, about 3 minutes, stirring now and then.
- Sprinkle 1 tablespoon flour over the onion and butter, stir to coat everything, and cook for 1 minute until it no longer smells raw. Scrape the bottom of the pan.
- Pour in 1 cup whole milk slowly, stirring as you go to break up lumps. Bring the sauce to a bare simmer, then add one 5-ounce can of tuna (drained) and season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Stir until the tuna warms through, about 2 minutes.
- While the sauce simmers, split the 4 hot dog buns in half lengthwise and toast them cut-side up under the broiler until they turn golden brown at the edges, about 2 minutes.
- Spoon the creamed tuna into the toasted bun halves and serve hot.
Note Swap canned tuna for shredded rotisserie chicken or smoked salmon if the shelf changes. Leftovers keep in the fridge for one day; reheat gently on the stove with a splash of milk to loosen the sauce. Serve with a side salad dressed simply or steamed peas if you have them.
