Warm quinoa and kale bowl with egg

A cooked grain and kale blend that needs little more than heat and an egg to become dinner. The shelf product is already seasoned and tender, so you're just building on what's there with a runny yolk and a quick pan.

Serves 2. 10 minutes, 10 at the stove.

  • one 8.5-ounce package organic quinoa with kale and brown rice

Staples

  • 2 tablespoons oil
  • to taste salt
  • to taste pepper
  • 2 eggs

  1. Heat 2 tablespoons oil in a wide pan over medium-high heat. When it shimmers, add the entire package of quinoa, kale, and brown rice and stir to warm it through, about 3 minutes, until it is fragrant and hot throughout.
  2. Push the warm grain mixture to the sides of the pan, creating a space in the center. Crack 2 eggs into the center and cover the pan. Cook for 2 to 3 minutes until the whites are set but the yolks run.
  3. Divide the grain and kale between two bowls. Slide one egg into each bowl, breaking the yolk so it can dress the grains. Season with salt and pepper to taste.

Note Swap the egg for crumbled feta or a handful of nuts for a cooler, drier bowl. Leftovers keep in the fridge for three days; reheat gently with a splash of water. Serve with a squeeze of lemon or a hot sauce on the side.
