Chicken noodle soup, stirred down

This shelf holds a complete soup, so you are really just heating and finishing it. A tired night calls for something that asks almost nothing of you, and this delivers warm broth, soft noodles, and shredded chicken in the time it takes water to boil.

Serves 2. 12 minutes, 3 at the stove.

  • 1 package organic star shaped egg noodles in chicken broth

Staples

  • to taste salt
  • to taste pepper
  • 1 tablespoon butter

  1. Boil 2 cups water in a small pot over high heat until you see a rolling boil, about 4 minutes.
  2. Pour the entire package of noodles and broth into the boiling water, stir once, and return to a boil.
  3. Simmer over medium heat for 4 minutes, until the noodles are tender and the chicken is heated through; stir once halfway.
  4. Stir in 1 tablespoon butter until it melts into the broth, then taste and add salt and pepper as needed.

Note Leftovers keep refrigerated for three days. Thin with more broth when you reheat. Serve with crusty bread or crackers on the side, or stir in a handful of fresh spinach in the last minute if you have it.
