Crispy beef and cheese burritos with quick sauce

These frozen burritos crisp in the pan until the tortilla shatters under your fork, while a quick sauce mellows and stretches the filling. You get dinner on the table in under twenty minutes with almost no effort, which is the point on nights like this.

  1. Heat 2 tablespoons oil in a large skillet over medium-high heat until it shimmers. Place 4 burritos seam-side down in the pan and let them cook without moving until the bottoms turn deep golden, about 3 minutes, then turn and cook the other side for another 2 minutes until crispy all over.
  2. While the burritos cook, stir 1/2 cup sour cream with a big pinch of salt and pepper in a small bowl and set it aside.
  3. Transfer the crisped burritos to two plates and squeeze 1 lime over the sour cream sauce, stirring well. Serve the sauce alongside or spooned over the burritos.

Note Swap sour cream for Greek yogurt if you have it. Leftovers keep covered in the fridge for three days; reheat in a dry skillet to re-crisp them. Serve with rice and a simple salad, or let the burritos stand alone with extra lime wedges.
