Old El Paso tacos with shelf kit

This is the quick dinner that the kit practically makes itself. The seasoning packet and shells do the work while you chop and brown the meat, turning a weeknight into something satisfying in under twenty minutes.

Serves 2. 20 minutes, 12 at the stove.

Staples

  • 1 clove garlic

  1. Heat 1 tablespoon oil in a large skillet over medium-high heat. Crumble 1 pound ground beef into the pan, breaking it with a spoon as it browns, about 4 minutes.
  2. Mince 1 clove garlic and stir it into the meat. Pour in the seasoning packet from the kit with 3/4 cup water, stir well, and simmer until the liquid reduces and clings to the meat, about 3 minutes.
  3. Warm the cheese sauce from the kit in the same pan or in a small pot over low heat, stirring, while you assemble the tacos, about 2 minutes.
  4. Fill the hard shells and soft tortillas from the kit with the seasoned beef, top with the warm cheese sauce, and serve at once with salt and pepper to taste.

Note Swap ground turkey or shredded cooked chicken for the beef. Leftovers keep in the fridge for two days; reheat gently. Serve with fresh salsa, shredded lettuce, and lime wedges on the side.
