From your shelf

  • 1 package Old El Paso crunchy taco shells dinner kit

Staples

  • 1 tablespoon oil
  • to taste salt

  1. Heat 1 tablespoon oil in a large skillet over medium-high heat. Add 1 pound ground beef, breaking it apart with a spoon as it browns, until no pink remains, about 5 minutes. Drain excess fat.
  2. Stir the seasoning mix from the kit into the cooked beef along with 3/4 cup water. Simmer for 2 minutes until the mixture thickens slightly, then taste and add salt and pepper as needed.
  3. Warm the taco shells in the oven at 350 degrees F (175°C) for 3 minutes, or according to package directions.
  4. Spoon seasoned beef into each warm shell. Top with shredded lettuce, diced tomato, and minced onion. Drizzle with the taco sauce from the kit.

Note Swap the ground beef for shredded rotisserie chicken or drained canned black beans. Leftovers keep three days refrigerated; reheat meat gently and serve with fresh toppings and shells. Serve with lime wedges, hot sauce, and a simple salad or Mexican rice on the side.
