Chipotle bacon queso with crisp tortilla chips

Warm this sour cream and cheese dip with the bacon and chipotles already mixed in, then serve it with tortilla chips for dipping. The Old El Paso queso does the work tonight: you just heat it gently until bubbling, taste for salt, and pour it into a bowl.

  • 1 container Old El Paso medium queso blanco bacon chipotle

  1. Pour the entire container of queso into a small saucepan and set it over medium-low heat. Stir occasionally to warm through, about 5 minutes, until the edges bubble gently and the whole thing is hot.
  2. Taste and add a pinch of salt if needed. Pour the queso into a serving bowl and set it on the table with the bag of tortilla chips.

Note Reheat leftover queso gently in a small pot with a splash of water if it thickens. Serve with chips as an appetizer or light supper. Stretch it by layering the warm queso with shredded chicken or ground beef and serving in warm tortillas.
