To buy
- 1/2 pound ground beef
- 1 head, 1 medium, 2 ounces romaine lettuce, tomato, and sharp cheddar cheese
From your shelf
- 1 kit (2 bowls) Old El Paso mini flour tortilla bowl dinner kit
Staples
- 1 tablespoon oil
- to taste salt
- to taste pepper
- 1 clove, minced garlic
- 1/4 medium, diced onion
- Heat 1 tablespoon oil in a large skillet over medium-high heat. Add 1/4 diced onion and 1 minced garlic clove; sauté until softened, about 2 minutes. While the aromatics cook, prepare the salad components by chopping lettuce, dicing tomato, and shredding cheese.
- Add 1/2 pound ground beef to the skillet, breaking it into small pieces with a spoon. Cook, stirring often, until no pink remains, about 5 minutes. Season with salt and pepper to taste.
- Warm the two tortilla bowls according to kit directions, about 5 minutes in a 350°F [175°C] oven or 2 minutes in a microwave, until crispy and ready to hold.
- Set each tortilla bowl on a plate. Divide the chopped lettuce between the two bowls, then top each with half the seasoned beef, half the diced tomato, and half the shredded cheese. Serve with the included taco sauce on the side.
Note Swap the beef for seasoned shredded chicken if you have it. Leftovers keep three days refrigerated; reheat beef gently in a skillet while eating fresh lettuce and tomato on the side. Serve with lime wedges, salsa, or sour cream if you have them on hand.
